Spelt Pizza Dough

This Spelt Pizza Dough is quick and easy to make. Top it with your favorite veggies or meat and cheese but do not forget about St. Hildegard's recommendations.

Ingredients
  

  • 250 g light spelt flour
  • 150 ml lukewarm water
  • 13 g fresh yeast or 1/2 tsp dry yeast
  • 2 tbsp sunflower oil
  • 1/2 tsp bertram
  • 1/2 tsp salt
  • 1 pinch sugar

Instructions
 

  • Prepare the Yeast: In a small bowl, crumble the fresh yeast (or sprinkle the dry yeast) and add the sugar and warm water. Mix to dissolve if using fresh yeast. Let sit for a few minutes until the yeast activates.
    Make the Dough: In a large bowl, combine the spelt flour, salt, bertram (if using), and sunflower oil. Add the yeast mixture to the bowl. Mix until the ingredients are combined, then knead the dough until it is soft and flexible. If the dough is too sticky, add a little more flour, but be careful not to add too much.
    Prepare the Pizza Pan: Grease a 17-inch diameter pizza pan (or four 7-inch diameter pans for smaller pizzas). Spread the dough evenly on the pan(s).
    Add the Toppings: Spread the marinara sauce over the dough. Add the sautéed onions, sautéed fennel bulb, spinach, and broccoli florets. If using, add the cooked chicken, beef, or fish. Sprinkle the chopped parsley, basil, hyssop, and summer savory over the toppings. Finish with the grated cheese.
    Bake the Pizza: Preheat your oven to 400°F (200°C). Bake the pizza for 20-25 minutes, or until the edges are lightly browned.
    Serve: Serve the pizza warm, accompanied by a cup of fennel tea for a refreshing pairing.
