FED (Fast, Easy, Delicious) Semolina Bread

When you're short on time but still craving the wholesome goodness of authentic spelt bread, this quick recipe is perfect. It yields a soft, fluffy interior with a lightly crispy crust—ideal for a delicious sandwich. Plus, it's a hit with kids!

Ingredients
  

  • 450 g spelt semolina flour
  • 120 g Whole spelt flour "Hildegarda"
  • 2 tsp salt
  • 2 tbsp sunflower oil
  • 350 ml lukewarm water
  • sesame seeds optional
  • 10 g dry yeast

Instructions
 

  • Grease a baking sheet with oil or line it with parchment paper. In a large bowl, mix together semolina flour, whole spelt flour, salt, and yeast. Add water and oil, then knead the dough until combined. Transfer the dough to a floured countertop and continue kneading for 10 minutes. Alternatively, if using a stand mixer, knead on a slow setting for 10 minutes from the start. Shape the dough into a ball and place it in a greased bowl. Cover with foil and let it rise in a warm place for 1.5 hours.
    Once the dough has risen, punch it down a few times to release the air. Gently knead it for less than a minute, then place the dough into a greased square or loaf pan. Brush the top with sunflower oil, sprinkle with sesame seeds, and cover with foil to rise for another 30 minutes.
    After 30 minutes, preheat the oven to 450°F. Bake the bread for 10 minutes, then reduce the temperature to 420°F and continue baking for another 30 minutes. Once done, remove the loaf from the pan and place it on a cooling rack.
